
If you watched the Kentucky Derby a little too enthusiastically on Saturday night, eating a healthy Muesli Parfait on Sunday morning is a nice step towards healthier living. The Four Roses Bourbon advertising on the glass provides a tiny reminder of your debauchery, but you can still feel good about the nonfat greek yogurt mixed with skim milk, rolled oats, vanilla and honey. With some toasted almonds and berries on top, it is the perfect hangover medicine.
I made this week's Craving Ellie in my Belly recipe in a variety of cups and dutifully stored them in the fridge overnight so the flavors could meld together. My husband enjoyed these on the way out the door to work in the morning and I felt like I was back in Switzerland where seeing muesli is a normal, everyday occurrence. I really need to make this one as well...love the little glasses you used for it all. You are so creative on a daily basis...envy abounds. It looks delicious.
