CEIMB: My Pick! Lemon Ginger Iced Tea with Berry Cubes

What is the best way to treat yourself after trimming all the shrubs in the yard? I think that Ellie Krieger's Lemon Ginger Iced Tea with Raspberry Ice Cubes is just about the perfect choice. It is refreshing and flavorful without being overly sweet. It takes a little advanced planning to make the raspberry ice cubes and steep the fresh ginger, but it is worth it to know that a delicious drink is waiting for you at the end of your job.

Lemon Ginger Iced Tea with Berry Cubes

Ingredients

  • 1 cup (4 ounces) raspberries, rinsed
  • Water for ice cube trays, plus 8 cups water, divided
  • 1/3 cup honey
  • 1/2 cup (2 ounces) coarsely chopped fresh ginger
  • 6 white tea bags
  • 3 lemons, juiced (about 1/2 cup)
  • Lemon slices
  • Mint sprigs, for garnish

Directions

Place about 4 raspberries in each compartment of an ice cube tray, 6 hours before serving iced tea. Fill with water and freeze.

Place honey, 2 cups water and ginger in a saucepan and bring to a boil. Reduce heat and simmer over low heat for 5 minutes. Remove from heat and add tea bags. Let mixture steep for at least 30 minutes and up to 1 hour, then strain out solids.

In a pitcher combine strained liquid with 6 cups water and lemon juice. Chill in refrigerator.

To serve, place 3 ice cubes in a tall glass and pour iced tea over cubes. Garnish with lemon slices and mintsprigs.

I miss CEiMB, and posts like this really make me miss it. I hope maybe in the fall I can join up again because it's such a great group. Anyway, any beverage with lemon and ginger rings my bell. And adding berry cubes only makes it better. This is perfect, perfect, perfect for the weather we have in Houston, and I'm putting it on my short list. Oh, great picture, too! I think it's so hard to take pictures of drinks!

Stunning picture! I didn't do all the garnishes because I was being kind of lazy, but they sure do look pretty. Great pick with this one; I loved it!

That looks so pretty! I bet my girls would love the berry ice cubes. I have some heart and flower ice cube trays from IKEA; I'll have to try using them for raspberry ice cubes.
