I am a salad nerd. I love salads for lunch and dinner too. I love chopped salads with many different colors. This one has blue (blueberries), purple (red onion), yellow (corn), green (celery, baby spinach), tan (chicken) and cream (homemade salad dressing). Somehow seeing a plate with lots of colors on it tricks my brain into making me think the meal is healthier.
Last week, a friend randomly mentioned that she had seen this salad on the Pioneer Woman's website and was dying to try it out. She suggested we eat it together sometime soon. Once she mentioned it once, it stuck in my head until I bought all the ingredients and made it for myself. Grilled Chicken with Feta, Corn and Fresh Blueberries seemed like an odd combination but I love all the items individually so I thought it had to work all together. I made this for dinner and served it over a bed of baby spinach. The flavors were amazing together and the warm grilled chicken really worked with the creamy dressing, fresh corn, tangy red onions, and sweet blueberries. I thought that the recipe made about twice as much dressing as needed so if you are not a huge creamy dressing user, it is good to have in the fridge for other future meals. I also omitted the fresh dill because it wasn't available in my grocery store and it tasted fine without it. I hope my friend makes this for me soon. I am not sure whether I should pretend that I haven't tried it yet so I can trick her into giving me the bigger portion or confess my culinary sins and laugh it off. I am known as the Salad Queen amongst my friends...that and the Soup Queen. That pretty much sums up my royalty status. This salad sounds interesting and delicious to me...I think I have everything on hand to make it tomorrow's lunch, yes, I do. Thanks.
