Bacon, Egg and Asparagus Salad is my new crush. I want to ask it to the prom in a unique way. I want to move to a deserted island, listen to Sade and Sting, and declare my eternal devotion to it. I want to make this recipe once a week and eat every last spinach leaf off the plate. I like the contrast between the soft boiled egg, salty bacon, crunchy toasted walnuts, soft asparagus, and baby spinach in a mustardy vinaigrette. We usually roast asparagus so it was nice to prepare it in a new way I look forward to seeing how all the other French Fridays with Dorie chefs interpreted this new classic.

Okay!! UNCLE!! That's it. I have to find some good asparagus so I can make this.
This was so good...I could eat this once a week and never tire of it. Now, this egg I understand. lol You did a beautiful job on this.
