Caramel Pots de Creme
"This is a grown up, silky sorta pudding" according to my five-year-old. For me, it is pudding wearing an Hermes scarf. I loved how this was complex, flavorful, and light all at the same time. Since the recipe only contains a few ingredients, this one is all about the technique. Make a simple caramel, turn it into a milky pudding, bake in the oven in a water bath, and then you are done. Making the chocolate pots de creme before helped me to figure out how things were supposed to look and feel. I loved this dessert- the caramel had a mellow yet sweet taste, and the texture was delicate and creamy. I looked the other way when my sons threw in chocolate chips because I liked it plain, right out of the fridge. Thanks, Peggy the Baker, for a great pick. I'm with Jessica - those cups are adorable! I have some that are slightly bigger and love how colorful they are. I sat out this week but I'm thinking I should have made ice cream with the custard...soon!
I loved these. Definitely going to make these again. Guess I better go back and do the chocolate ones now.
It's nice to know that I'm not the only one whose kids think chocolate chips should be added to everything... =) I'm looking forward to making these.
Lovely...those little cups are just such fun to see and I would imagine eat out of...very pretty. Making this one sooner or later...hopefully sooner.
