FFWD: Cola and Jam Short Ribs

Cola and Jam Short Ribs

Cola and Jam Short Ribs- sounds like an odd combination, no? Leave it to Dorie Greenspan to elevate a classic summery dish and give it a new, modern twist. This dish is ridiculously easy but takes a few hours of mostly passive kitchen time. Take your basic spareribs, rub them with a ginger/chinese five spice powder/salt/pepper spice blend. Glaze it with a mix of orange juice, lemon juice and apricot jam. Roast it in the oven for a few hours and baste it with Coca Cola on it at the very end. A little bit sweet, a little bit hot, a little bit spicy, and a whole lot delicious My whole family loved this dish- it was flavorful without being too spicy for the kids, and it was so fun to make a mess with ribs in the backyard on a hot summer night. I served these with cold beer, corn on the cob, and watermelon for dessert. I don't think I will ever grill spare ribs again. It is nice to avoid firing up the grill when the temperature is rapidly approaching 100 degrees. I used two pyrex dishes to cook up my 3.5 lb spare ribs but next time, I will take the advice of my fellow French Fridays with Dorie cooks and use tin foil for easier cleanup. Hooray for summer and messy foods eaten with fingers instead of utensils!

Yours look amazing! We enjoyed them, even though we have a favorite rib recipe here. Sounds like you had a great time with them, too : )

I love the color of your ribs. Glad you also enjoyed them! I couldn't stop licking my fingers. :)

Glad you were a smart girl and used the tin foil! It took me a day to get the burned cruddy parts completely off my baking dish. I loved the smell of these ribs, so that kind of makes up for it.

I envisioned these as a summery dish, but the weather here isn't co-operating. You served the perfect summer menu.

These were a great eat-outside backyard kind of food, for sure! Watermelon sounds like a great side.
