FFWD: Warm Weather Vegetable Pot au Feu

Pot au Feu. It translates to Pot on the Fire and is traditionally a french beef stew. Please add it to the rapidly growing list of "Cool French things I had never made before but suddenly can't live without." This Dorie Greenspan variation is vegetarian and uses an array of vegetables cooked in a homemade broth and topped with a soft boiled or poached egg. I used shiitake mushrooms, asparagus, carrots, baby spinach, new potatoes, and fresh green beans and topped it with chopped basil and parsley. It was nice to have a dish that was warm, satisfying, light, and combined a lot of vegetables in one fell swoop. I look forward to making this again with whatever veggies show up in my CSA basket or look best at the Farmer's Market. Check out what the other cooks of French Fridays with Dorie thought of this.

OK, my guilt at not even trying a spoonful - officially hit after reading your post :) I had been so happy that my family liked it (I knew Nana would since this is right up her alley) that I didn't bother to try it. Since my family has demanded - I mean requested- a repeat....I will make sure to give it a test. Thanks for sharing.

I definitely think this is a good way to use up veggies from my produce basket. There are always a few things that I'm not too sure about, and throwing them in a pot of soup sounds perfect!

I've been trying to get more veggies into our meals, and this looks like a great way to do it. The question is whether the girls would actually eat it... =)
