Beets. I think they are one of the most polarizing foods around- most people have a love-em or hate-em relationship with the strange looking vegetable. I am a recent convert to the Beet Lovers of America Group and am happy to be figuring out all the cool ways to cook the regularly. For this week's French Fridays with Dorie recipe, I cooked washed beets in a covered pyrex dish in the microwave and peeled them once they cooled down. I have tried boiling and microwaving them and have had success with both methods. I did a variation on the chopped beets and icy red onion salad and added cherry tomatoes, field greens, toasted walnuts and this local goat cheese to make it a full meal. The homemade vinaigrette perfectly mixed with the earthy beets and created the perfect backdrop to this dish. I served this with crusty bread and it was the perfect summer dinner. I look forward to seeing all my fellow beet eaters representing in this week's blog roll.

Thanks for adding to the recipe...we really liked it and I love the idea of making it a full meal like you did. I've been eating toasted nuts (mostly pecans) on all my salads ever since the FFWD Asparagus salad...your salad sounds great. My husband bought that goat cheese for when we did Torteau de Chevre for FFWD...there was no way I was going to use it in a cake! It is really wonderful cheese. We had it with a salad and bread & I got a less luxurious cheese for the Torteau.
For your beet salad, did you use marjoram?
I bought a beet to try it. Bought a beet. As in 1 beet. It's still sitting here and I am wondering if my horizons are going to be expanded this week or not. It's looking like not possibly. I will say, your salad looks lovely.

That salad looks incredible - love what you did with it. I am not 100% in the beet camp yet - but they are so pretty, I want to eat them anyway.
I'm definitely in the Beet Lovers of America group. I love to roast them. I've never tried microwaving, but what a great thing to try when it's too high to turn on the oven. I'll try that.
I adore beets and there isn't much new anyone can tell me about them. Then Dor comes around and says 'use oregano' and I did and I loved it. Great beets!
