FFWD: Fish en Papillotte and Melon-Berry Soup






How do you say two-for-one special in French? This week, I give you both melon-berry soup and fish cooked in a packet.

The first recipe was Melon-Berry Soup. This cold, refreshing treat combines ripe melon with berries and ginger. The fruit was delicious and I liked the interplay between the pureed part of the soup and the whole berries added before serving. I enjoyed this with my friend Stephanie after a great day at the beach and we both agreed that the ginger was a nice addition to the dish without overwhelming it. I look forward to seeing what everyone else thought of it.

The fish recipe called for salmon but I chose cod as a more kid-friendly option. The packets were easy to assemble- fresh basil leaves, tiny grape tomatoes, a splash of olive oil, lemon, and some salt and pepper. They baked perfectly in the oven in about 12 minutes and my family devoured them. They created a little bit of fresh, lemony sauce inside the packet, were fun to open at the table, and tasted like something I could make on a weekly basis. I look forward to seeing what everyone else thought of it.

Both of your recipes look great! I still need to catch up and make the fish. It looks like you and your friend had a lovely day. Both of these dishes are perfect for a picnic.

Thanks for the cod tip! I still have to try this recipe and I think cod sounds really good. We liked the soup, too but were overwhelmed by the ginger (my fault for adding too much).

I love cooking fish in foil packets and was really happy to see Dorie also endorses that technique. I really enjoyed the soup - but I went as far as to blend together both the melon and the berries.

Gotta love a twofer, and your soup and fish look amazing. My kids liked salmon when they wouldn't touch any other fish - aren't kid tastes odd?
