Eggplant Caviar is a fancy pants way of saying Roasted Eggplant Dip. I used eggplant from my CSA basket and made it twice- once with yellow onions and once with red onions. I liked it both ways but thought that the yellow onions might a little milder and a better crowd pleaser. I just found a new recipe I could eat every day between 4pm and 7pm during the "I am hungry but there is no dinner in sight" time of the evening. Thanks to
French Fridays with Dorie for a another great pick.

I skipped the onions because I am not a raw onion fan, but like the idea of a milder yellow onion. Thanks for the tip!
How appropriately named "I am hungry but there is no dinner in sight". LOL Sure beats commercial energy bars or raiding the office vending machine!
mine started as a snack and turned into dinner...couldn't stop eating it. :-) yours looks lovely with the red onion.
This caviar is definitely snack-time material. Delicious and heathy too!
I had said I would make this with roasted red peppers, but ended up just eating it on crostinis. And today? With tortilla corn chips! It was so good.
This would be a great pre-dinner snack. I made it into a sandwich with pita bread and crunchy vegetables.
So nice to find a recipe that is easy and healthy. I think I got my ratio off a bit on this first try but will play with it again- too good (and healthy) not to. Nana was not a fan of my first effort but I will try to see if I can convert her on a 2nd try :)
I used half a small onion in mine, but think next time I'll use a whole onion made milder using Dorie's icy onion technique. You describe this dish perfectly; it's made for a pre-dinner snack.
Yea...everyone is happy with this recipe and truly this is a great dip. It goes well with pita, crackers and even this can a add on to a pasta dish!
