This week, French Fridays with Dorie offers us a chance to take ordinary grape tomatoes and make them better and an opportunity to take great tomatoes and make them sublime. By roasting them with a little olive oil and herbs, at a low temperature, for several hours, the flavors are condensed and the humble tomato becomes somehow sweeter and more substantial. I make oven roasted tomatoes and usually use this recipe, but now I will have two to choose from too. We ate them in an omelette with goat cheese, over a green salad, and strewn over grilled flank steak. I look forward to trying them in more variations when I make them again.

Simple Slow-Roased Tomatoes

Looks like art work! I have about six different roasted tomatoes recipes that I use back and forth and they all taste basically the same, although the one with roasted hot chilis is obviously a bit hotter! I first started making them when I made Ina's slow roasted tomato soup...about 1,000 batches ago. Not heating up the oven now for this one, but come fall and winter (when this method showcases tomato flavor from boring hothouse ones) there is nothing better than smelling these roasting in the oven on a cold day. So many uses for them, yours sound particularly wonderful.

I am with everyone else on loving the goat cheese idea. Brilliant !!! We are on a omelet kick in this house and I had not even thought of using these tomatoes in such. SO glad I read your post ! Nana enjoyed these so much that she fired up her oven again for batch 2 today ~
The omelet is a great use for these. It is fun to see what everyone did this week.
I finally got around to making them and they were perfect tucked into Bison Burgers I made last night. I'm afraid they aren't lasting long as I'm eating the rest like candy.
