In the category of "better late than never," I made cornmeal loaf for Tuesdays with Dorie this week. I used dried apricots as my dried fruit and loved every moist, delicious bite. I love the texture of cornmeal in baked goods and it was perfect for either a lazy breakfast or afternoon snack. Visit Caitlin of Engineer Baker for the entire recipe. Yes, better late than never...uh, hmmm...I am falling into the never catagory too often lately, going to make an effort to zip that up a bit come September (which would be tomorrow). We shall see. Your bread looks nice.
How pretty! I think I should have used apricots in mine - the apples/pears didn't stand out much.
