FFWD: Deconstructed BLT and Eggs

Deconstructed BLT is this week's French Fridays with Dorie selection. Take the best of the BLT (bacon, lettuce, tomato) and add croutons fried in bacon fat and hard boiled eggs. Toss in a simple vinaigrette and you have the perfect meal. The recipe recommends a swipe of mayo on top of each egg. I served the salad plain in the bowl and let me dinner guests add their own mayo to taste. I love the salty bacon with the creamy egg and crisp, almost bitter greens. It is a great combo- filling, varied texture and color and perfect for this weird end of summer meets early fall weather we have been having recently. Warning: croutons fried in bacon fat are extremely addictive. You might experience trouble eating one and walking away. You might be unable to eat ordinary croutons anymore. You have been warned.

I know, I had to hide the croutons from myself in order to keep from eating them all before the salad was finished. Highly addictive and quite dangerous!

I think I might have to try the croutons again with a different type of bread. I did love the salad though.

Loved, loved, loved this as I made it a couple of weeks ago and I think I might need to make it again soon. Very soon. Yours looks outstanding. Good move on the mayo on the side deal.

Yeah, those croutons were awesome. I might need to make them every time I have bacon, just for the heck of it. I love your photo!

Wow, your eggs look perfect! I forgot about using the bacon fat for the croutons and did mine in butter (then forgot to add them to the salad!). Think I need to make those croutons properly for my next salad :)

I agree about the croutons - I even used vegetarian bacon, and they were still crazy good. Loved the dressing, too.

Excelllent warning! I actually had to go buy more bacon today so I could make more croutons. Love the contrast of the blue against the colorful salad!

LOL. Love your warning. I feel the same way about the bacon bites. Made extra just to be sure we would have some left for the salad.
